Château Certan de May is a first-class Pomerol estate that is named after its 17th-century founders. It sits on Pomerol’s prized central plateau, opposite Le Pin and next to Pétrus. After 13 years of development, the tannins in this, its first wine, are wonderfully integrated. Expect ripe black-fruit flavours, low acidity and an excellent finish. When serving, drive the corkscrew in further than usual. Gently ease the cork out and decant for at least an hour before serving at 15 degrees. Excellent with lamb.
